They routinely troll any and all images through facial recognition for example... not for law enforcement purposes but for 'personalised ads' aka trolling you for personal data which they then sell off.
That said, I'm not sure whatsapp is any better. IIRC that's in the pocket of the Chinese government instead. Although they're probably not interested in you, unless you're secretly aiding Chinese protestors?
I'd suggest Telegram normally, but not at the moment since the French just arrested it's CEO to put pressure on the company to give them the encryption keys. Using the usual excuses of CP and criminal activities and claiming he's complicit since he runs a company that can be used for that. (not is...they've no evidence because they can't decrypt any messages)
I believe Proton is probably the safest bet, they're owned by CERN and a consortium of nuclear scientists, (for obvious reason they need secure communications). I know they have end-to-end encryption, no adverts, and I think they have a chat or messaging app nowadays as well as the usual email.
